we bought these big beautiful peaches at the farmers market yesterday which got me thinking about making peach cobbler. here’s the recipe for one of jeff’s favorite desserts (although, i have to say, it actually tastes better with peaches of the canned variety!)
2 cans of fruit (drained)
1 stick of butter
2 tsp baking powder
1 ½ cups sugar
¾ cup flour
½ tsp salt
¾ cup milk
cinnamon (to taste)
– melt butter in 9 x 9 pan
– mix baking powder, ½ of the sugar, flour, salt and milk.
– pour fruit in the pan with the other ½ of the sugar and cinnamon.
– pour batter over & sprinkle with additional cinnamon
– bake at 350° for ½ hour – 1 hour.
serve warm with ice cream & or cool whip.
