menu monday mania

seriously… i’ve got to start menu planning on saturday or sunday. thinking of meals monday morning just makes me hungry. & being hungry for chicken curry this early in the morning just isn’t a good thing. now i’m going to think about & crave it all day long. i think i’m going to think about cupcakes instead – at least they are prettier. so what are you craving for dinner tonight?

* monday: chicken curry
* tuesday: the absolutely easiest chicken tacos ever
* wednesday: homemade noodles (& little bit of chicken) soup
* thursday: meatloaf
* friday: taco salad

We have a crazy week this week-- between my schedule and my husband's one of us is gone every night until Friday. Soooo... I'm kind of slacking on the menu plan, but here goes: Mon: Pita Pizza, Salad & strawberries Tues: Sandwiches, carrot sticks, & air-popped popcorn (we're all out tonight) Wed: Dinner @ church {taco pile-on} Thurs: Cod Fillets, corn, orange slices Fri: Pasta w/ Meat Sauce, Mixed Veggies, Garlic bread .-= Patricia┬┤s last blog ..Making the Cut =-.

DOUBLE CHOCOLATE CHIP CUPCAKES Makes 12 big cupcakes 3/4 c. butter, softened 1 1/4 c. sugar 2 eggs 1 tsp vanilla 1 3/4 c. flour 1/2 c. cocoa powder 1 tsp baking soda 1/2 tsp salt 1 c. milk 1 c. chocolate chips powdered sugar Preheat oven to 375 degrees. Line a 12 hole muffin tray w/ paper cups. In large mixer bowl, beat butter and sugar until light and fluffy (3 mins). Add eggs and vanilla; beat well. Stir together flour, cocoa, baking soda, and salt. Add the flour mixture to butter/sugar mixture alternately with milk; beating well after each addition. Stir in chocolate chips. Fill prepared muffin cups about 3/4 full with batter. Bake 15-22 mins or until cupcake springs back when touched lightly in center. Cool and sprinkle with powdered sugar.
