it’s like bbq chicken pizza, just not as messy, but definitely as yummy. this recipe was adapted from my favorite new (literally) little cookbook: the trader joe’s companion. (it’s tall & skinny, so it fits it your purse… a “portable cookbook,” & definite must-buy! although it’s geared towards trader joe’s fan & shoppers, most of the recipes can be easily adapted.)
bbq chicken pasta:
farfalle pasta (or any pasta of your choice)
1 Tb. extra virgin olive oil
3 cups cooked chicken, cut into bite-sizes pieces
2 cup (frozen or fresh) bell pepper strips
1 cup (frozen, fresh or canned) corn
2 tsp garlic
2 cup+ marinara sauce (i usually just use an entire jar)
1 cup+ your favorite bbq sauce (i usually use about 1/2 a jar)
1/2 cup of mozzarella shredded cheese (or any italian cheese will do)
1/4 cup chopped cilantro
1. cook pasta according to instructions
2. meanwhile, heat olive oil in a medium-sized sauce pan over medium heat. add chicken & saute. add vegetables and garlic & cook for about 3 more minutes. add marinara & bbq sauce to taste… if you want it a bit more bbq-ey, keep adding sauce. heat sauce, chicken & veggies just to boiling & then remove from heat.
3. drain pasta, reserving about a 1/4 cup of starchy pasta water to thin out the sauce. add chicken & sauce mixture and cheese.
4. top with cilantro & serve.
